Born right here on the Front Range, Whole Sol is one of Colorado’s fastest growing restaurants. The 100% organic restaurant was founded by now newly-weds Phil Dumontet and Alexa Squillaro, both avid marathon runners and wellness advocates. Phil Dumontet is no stranger to founding food companies, his first being Dashed, which was later acquired by GrubHub. Squillaro has a Masters in Food Science from Columbia University and is the unofficial “Chief Taste Officer”. The athletic duo relocated to Denver in 2017 to start Whole Sol, which has so far opened two locations: in The Grand building near Denver’s Union Station and on Boulder’s Pearl Street. And with recently announced plans to open two more Colorado locations (… more on that later!), there are no signs of things slowing down. Whole Sol swept the 5280 Magazine Reader’s Choice Awards in three categories: Best New Restaurant, Best Brunch Restaurant, and Best Vegan/Vegetarian Restaurant.
What makes Whole Sol special?
Everything about Whole Sol is intentional, transparent, and seeks to promote health, wellness, local businesses, and general clean living. This begins with big picture stuff, like how the strategic locations its stores must align its values. The Union Station location in Denver is within arm’s reach of Flywheel, OrangeTheory, the Colorado Athletic Club, Pure Barre, and even newer fitness facilities. The Boulder store is located in the heart of it’s cyclist- and pedestrian-friendly downtown.
Of course, the same meticulous planning is evident with the menu, which is comprised of 100% organic ingredients and almost all vegan and gluten/dairy free items (the only exception being egg!). Whole Sol is focused on bringing ancient, time-proven whole foods like acai, turmeric, and dates to the present day with modern twists on ancient foods.
What’s next for Whole Sol?
The wellness restaurant has just signed a lease for two new locations in Colorado so it will be doubling its presence in hopes of bringing bol’s to everyone!
Their next location will be on the ground floor of Lakehouse, a high-end residential development near Sloan’s Lake. Call it a match made in heaven: Lakehouse is the first housing development in Colorado to pursue the WELL Building Standard. Everything from the design, to the materials, amenities, and service of Lakehouse will be uniquely dedicated to enhancing a healthy and balanced lifestyle. It only makes sense for Whole Sol to be available right downstairs for all residents at Lakehouse!
You can also find WholeSol in the RiNo Neighborhood at The Hub, a boutique mixed-use development office and retail building that is also home to Home Advisor and WeWork. The Hub is a unique “campus” environment for commercial spaces that promotes wellness by separating office spaces from their amenities. And the amenities are plentiful. And, of course, in alignment with Whole Sol’s focus on balance and wellness.
